Census information

This is not a request for a look-up; rather, I am hoping that someone could clarify an entry found on the Boston, Lincolnshire (District 14, Page 11) 1901 census. The entry is for my great-grandfather's (William Kirkham) family and under occupation for both my great grandfather and my grandfather (Frederick) is written Hotel Boots-Dombat. Now, I have a general understanding of what a Hotel Boots did...but I do not know what the Dombat notation was. It appeared to have been written by someone else (the handwriting was different). Could it have been the name of the Hotel at which they were employed?
This is just one of those little mysteries which keep me coming back and looking at the census page over and over again...Any insight would be appreciated.
