The Sarah House who is down as Lodger is the daughter of Sarah aged 75. She gave birth to Thomas in 1844 before her marriage to James House in 1845. James died 1848.

No death in Somerset 1840 - 1841 for a William Stevens who would fit.

Why does his death have to be 1840-1841?

There is a burial for a William Stevens 8 March 1821 in Thornfalcon aged 50 (yob 1771) which would fit. Last baptism of a child to William and Sarah that I can find is for Robert in 1819 so william could have died anytime after that child's conception.
