Help with certificate interpretation

Would the dates on marriage certificates be correct usually? I have now discovered two marriage certificates dated around Christmas time and subsequent first births 5 or 6 months later in the early 1900's. The first just made me smile (being a big RC family :)), but the second made me wonder if the dates were correct or if this was just a regular occurance?

Also - if the father of the bride/groom is deceased, would it always show it - as I have a marriage certificate that says the father's name without saying deceased, but I cannot find the father anywhere, this is possible because he was in Ireland.
