Births
BURKE ELLEN 6039/1862 JOHN CATHERINE - BRAIDWOOD

This one is an odd one out.

BURKE LAVINIA 3283/1861 JOHN CATHERINE - CHIPPENDALE

Ignore the family in Maitland.

Can't tell if any of the baptism V records fit.

Can't see a marriage in NSW for John & Catherine.

Lots of John & Catherine Burke in Assisted to NSW list.

Death BURKE LAVINIA 1562/1861 JOHN CATHERINE - CHIPPENDALE

Crookwell Gazette (NSW) - Wed 6 Sep 1944 p.5
MRS. ANN LEARY
At the age of 80 years Mrs. Ann Leary passed away in Sydney on August 30th. The late Mrs. Leary was the daughter of John and Catherine Bourke and was born at Braidwood. ...
The remains were brought back to Crookwell and interred in the Catholic portion of the Crookwell Cemetery, Rev. Father McKenna officiating at the graveside.

I would guess John and Catherine arrived from Ireland married and were RC.

A lot of those baptism records are RC and some are in volumes past 123 so I can't look them up.

Yes, those Bourke at Goulburn could be same family as those at Braidwood.

Two deaths that caught my eye.

BURKE CATHERINE 10937/1884 JOHN BRIDGET - COOMA * can be ruled out

BURKE CATHERINE 11232/1891 LUKE UNKNOWN NIMITYBELLE

I've found a tree for the Maitland family and a tree for a family mainly at Parramatta (most of the early baptism records fit that family).

Can't find a tree for Goulburn/Braidwood family.

Yeah, the trees don't look too helpful for the early years, one has material in Parramatta, Goulburn and Braidwood... Also has John and Catherine Mary [Horan] married in Ireland 1834 and in NSW 1852 to the same Catherine  Another tree has the 1852 marriage with a Catherine Ryan.

Might have found something, see what you think.

Goulburn Evening Penny Post (NSW : 1881 - 1940)
Thu 27 Mar 1913

Mrs. Catherine Bourke, widow of the late Mr. John Bourke, died in Goulburn on Tuesday afternoon at the residence of her daughter, Mrs. James Turner (Mayoress), where she had been staying for some weeks. Mrs. Bourke, who was a sufferer from asthma, had not been well for some days, but it was not thought that the end was so near, and the old lady did not take to her bed until the day of her decease. Mrs. Bourke, who was 81 years of age, was born in Connaught, Ireland, and came to this State when a young woman. With her husband, who predeceased her by some 24 years, she lived at Braidwood for some time, afterwards removing, about forty years ago, to Pejar, where Mr. Bourke had taken up land. The deceased is survived by two sons--Messrs. Patrick Bourke, of Crookwell, and John Bourke, of Kingsdale--and three daughters--Mrs. Horn, of Sydney, Mrs. Turner, and Mrs. W. J. Leary, of Third Creek. Mr. Turner's mother died on Monday week, and Mrs. Turner's mother only survived her by eight days. The body of Mrs. Bourke was taken to Crookwell on Wednesday afternoon for interment beside that of deceased's husband.

Interestingly the tree I was quoting from has Catherine's death as 1913, but it's not clear if she is nee Horan or Ryan.
