Lime mortar and horse hair

I have just been watching a show on telly and they were building a wall the " old fashioned" way with lime mortar and horse hair.

Is it really horse hair? Im just wondering how they did this. Its not like sheep you can shear. Im assuming when a horse died that the hair was kept for the purpose of building
