Quilter Family 1851 Mystery?

My ancestors Nathan and Elizabeth Quilter lived in Leigh On Sea in Essex. Nathan was born in Leigh in 1808 and Elizabeth born in Leigh in 1813. They are on the 1841, 1861, and 1871 census in Leigh. But not 1851.

Here is the interesting bit, two of their children Jabez and William Quilter were baptised on 30th March 1851 at St Clement, Leigh. That was the day before census night of 31 March 1851.

Their older children were Nathan born about 1836, Caroline born 1839, Elizabeth born about 1842 and Emma Harriet born about 1846.
