Reserved Occupation?

My father Herbert Thomas Bustin (1913- 1990) was working as a porter at Pinewood Hospital, Finchamstead, Wokingham according to the National Registration of 1939 I think he then left to work as an agricultural worker on a market garden in Sussex. He claimed he was excused from joining up or home guard duties as he was in a reserved occupation, I would like to investigate a, Why this was, are there any documental evidence of these cases and b, His movements during the war after 1939? I know as a child we moved every two or three months so I have a feeling he was the same before my birth in 1957.
