How does one go about tracing records from France and Germany?

My Grandmother is French and knows two generations back, we have a family tomb at Père-Lachaise but after that?

And my Great Grandfather, Victor Grunhut is German born...

Awkward so and sos!!!

French records are kept in the local Town Halls for 100 years and are then sent to the apropiate Department.
Germany is rather difficult as what we know as Germany has only existed in modern times and the borders have changed many times even in recent years. It is made up of a number of different countries such as Bavaria and Prussia plus numerous small principalities. All keeping their own records.
I suggest that you read up on the countries before starting research. there are also Anglo German and Anglo French FHS which can help you. Go to http://www.genuki.org.uk/Societies/ for initial information.
