Whatever happened to Ellen Stock?

Right I got a birth cert by PDF file come through confirming that Ellen Stock was the daughter of John Stock and Rebecca Letch. Born 5th May 1854 in Rochford town itself in Rochford reg district.

Rebecca died in April 1856 at the Brentwood asylum and buried in Great Burstead. John died in 1858 in Hockley. Buried there. His other older children on the 1861 census do not have Ellen living with them. But I cannot find my ancestor Henry Stock on the 1861 census anywhere. He was born in 1843 in Weathersfield and later lived in Leigh On Sea.

I have looked on the new GRO pre 1866 death age indexes and none of the Ellen (and variants) Stock's died that would ring a bell.

I wonder if did she die as an infant or was adopted out once her parents died by the time she was 4 and a half. I did check Great Burstead and Hockley and even Rochford for burials and no avail.

I live a ten minute drive from Leigh on Sea there isn't a Weathersfield near here, so I looked it up on Google maps.There is a Weathersfield in Braintree about forty mintutes away, hope this helps.
