I haven't got her death certificate. Not yet.
I realise you are wanting information on Jenny before she went to Sweden but sometimes we have to go forward in our searches to get bits of information to be able to move backwards. Such as Jenny's death certificate. Her time in Sweden might give up some clues on her background in Scotland. Depending how well the informant of death knew her the death certificate might shed some light on more information on Jenny such as parents etc. Jenny was a business woman, have you contacted the archives in Sweden to see if they have any information on her. She might have had to register the business etc. and sometimes these records also might give up some information on previous history of the person.

I'm just in the beginning of my research, appreciating every little hint about Jenny's first 19 years in Scottland.
I think this should be your number 1 priority, Like Gibbo said, death cert's sometimes hold vital information. Also see if you can find out who had that elaborate memorial erected.

Duncan, Jenny , 1801–1886, a businesswoman who was highly regarded at the time, one of the first women to run her own business in an otherwise completely male-dominated Helsingborg. She was born in Scotland and came to Helsingborg in 1821, was employed by Peter Mollberg until 1828 when she became governor of the Follin family (family)at Pålsjö. In 1838 she applied to the Citizens' Elders for permission to trade. There were several rejections, including on the grounds that she “could not, as a lady, get the same rights as the trader”. However, Duncan did not give up and soon she had opened a clothing store in the so-called Arnhamn House at Stortorget. In 1862, she moved the store to Hotel Mollberg's property. In 1869 she handed over the business to Miss Josephine Bader. The store survived for a long time and eventually came through Amalia and Lars Virgin called Textilbolaget.

Wonder what made her go to Sweden, a orphan about 19 /20 years old going to a foreign country. Guess they come to Australia to so why not Sweden. A woman well ahead of the times for back then.
I tried finding a passenger list for back then but it appears none have survived.

It"s like pulling hen's teeth researching Sweden. If she was orphaned then maybe that's not her birth name. Maybe, just maybe she was working for a Swedish employer in Scotland.
