Looking for them in 1851 and Bridget's death, other researchers have her death as 1854.

Very elusive, can't find them in 1851 at all.
The 1854 death is Bridget DURNETT in Newmarket. Difficult to say whether this is correct or not without an age but it is the best match in the death index.

An interesting entry in the Cambridge Independent Press 15 May 1858 :-
an auction under the will of William Durrant of Burwell, selling off his homestead on North St Burwell plus 29 acres of land. (he is a sedge merchant and farmer) Interested parties to apply to the solicitor, the auctioneer or William Durrant of Soham. This must be the Wm of the 1861 census mentioned previously as there was no other in Soham in 1861.

Should be able to find North Street Burwell in 1851 but can't:-
William & Bridget are on North St 1841
John & Harriet on North St 1861 (turf & coal merchant, age 43, born Burwell)
can't find any of them in 1851, Looks as if Burwell Cambridgeshire is entirely missing from that census, only Burwell in Lincolnshire is there in 1851.

Yep, the William who d. in 1858 is Bridget's husband [says he hopefully], mostly all first born males are William on this line
